One Skillet Mediterranean Pork and Rice
Ingredients:
- 4 boneless pork chops
- 1 cup long-grain rice
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 can 14 oz diced tomatoes, undrained
- 1/2 cup Kalamata olives, sliced
- 1/4 cup capers, drained
- 1/2 cup feta cheese, crumbled
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Add salt and black pepper to both sides of the pork chops
Warm up the olive oil in a skillet that can go in the oven over medium-high heat
For two to three minutes on each side, sear the pork chops until they are browned
Take it out and set it aside
Put smoked paprika, dried oregano, dried thyme, and minced garlic in the same pan
Stir for one to two minutes, or until it smells good
Then add the long-grain rice and stir it around to cover it with the fragrance
Put in the chopped tomatoes, sliced Kalamata olives, and capers that have been drained
Combine well
Put the pork chops that have been seared on top of the rice mixture in the pan
Place the skillet in an oven that has already been heated and cover it with a lid or aluminum foil
Put it in the oven and bake for 25 to 30 minutes, or until the pork chops are soft and the rice is cooked
Before you serve the dish, top it with chopped fresh parsley and crumbled feta
