Mexican Chopped Salad with Chorizo, Avocado, and Cilantro Lime Dressing

Ingredients:
- 1 cup chorizo, cooked and crumbled
- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup black beans, cooked and drained
- 1 cup corn kernels, cooked
- 1 avocado, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup queso fresco, crumbled
- 1/4 cup roasted pepitas pumpkin seeds
- 1 lime, juiced
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
In a large salad bowl, combine the chopped romaine lettuce, halved cherry tomatoes, cooked black beans, cooked corn kernels, diced avocado, finely chopped red onion, and chopped fresh cilantro
In a small bowl, whisk together the lime juice, olive oil, minced garlic, salt, and pepper to make the cilantro lime dressing
