Easy Chicken and Dumplings
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups water
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
Instructions:
In a large pot, heat some oil over medium heat
Add the diced chicken and cook until its no longer pink
Remove it from the pot and set it aside
In the same pot, add a bit more oil if needed, and then add the diced carrots, celery, and onion
Saut for about 5 minutes until the vegetables start to soften
Add the minced garlic and saut for another minute until fragrant
Pour in the chicken broth and water, and return the cooked chicken to the pot
Stir in the dried thyme, dried rosemary, salt, and black pepper
Bring the mixture to a simmer and let it cook for 15-20 minutes until the vegetables are tender
In a separate bowl, mix the all-purpose flour, baking powder, salt, and milk to make the dumpling dough
Drop spoonfuls of the dumpling dough into the simmering chicken and vegetable mixture
Cover the pot and let it simmer for an additional 15 minutes until the dumplings are cooked through and puffed up
Serve hot and enjoy your easy chicken and dumplings
