Shrimp Scampi Zoodles for Two
A quick and easy spiralized meal, Shrimp Scampi Zoodles for Two is a light and flavorful dish perfect for a cozy dinner. Zucchini noodles zoodles are tossed in a classic garlic and white wine sauce with succulent shrimp, creating a delightful low-carb alternative to traditional pasta.
Ingredients:
- 2 medium zucchinis, spiralized into zoodles
- 10-12 large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon butter
- 1/4 cup white wine
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 2 tablespoons chopped fresh parsley
- Grated Parmesan cheese for garnish
Instructions:
In a large skillet, heat olive oil over medium heat
Add minced garlic and saut until fragrant, about 1 minute
Add shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes per side
Remove shrimp and set aside
In the same skillet, add butter, white wine, and lemon juice
Bring to a simmer
Add zucchini noodles zoodles to the skillet and toss to coat in the sauce
Cook for 2-3 minutes until zoodles are tender but still firm
Return the cooked shrimp to the skillet
Season with salt, pepper, and chopped parsley
Toss everything together until heated through
Divide the shrimp scampi zoodles between two plates
