Leftover Turkey Soup

This easy leftover turkey soup is a perfect way to use up Thanksgiving or Christmas turkey leftovers. Packed with comforting flavors, its a hearty and satisfying meal for chilly days.

Ingredients:

  • 4 cups leftover cooked turkey, shredded
  • 8 cups turkey or chicken broth
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried sage
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup pasta optional

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

Dice the onion, carrots, celery, and garlic and add them

It will take about 5 minutes of sauting until the vegetables are soft

Salt and pepper should be added along with the turkey shreds

Stir every now and then for another 5 minutes

Add the chicken or turkey broth and bring it to a boil

Turn down the heat and let it simmer for 20 to 25 minutes

This will give the flavors time to blend

If you want to add pasta, cook it according to the directions on the package first, then add it to the soup in the last five minutes

If you need to, change the seasonings, and then serve hot
