Super Soft Gingerbread Cookies
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 3/4 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/3 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 1/3 cup granulated sugar for rolling
Instructions:
Preheat your oven to 350F 175C and line baking sheets with parchment paper
In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg
In a separate large bowl, beat softened butter and brown sugar until creamy and smooth
Add molasses, egg, and vanilla extract to the butter mixture, and beat until well combined
Gradually add the dry ingredient mixture to the wet mixture and mix until a soft dough forms
Cover the dough with plastic wrap and refrigerate for at least 1 hour
Once chilled, take out the dough and let it sit at room temperature for a few minutes to soften slightly
Pour the granulated sugar into a shallow dish
Roll the dough into small balls about 1 inch in diameter and then roll each ball in the granulated sugar until fully coated
Place the sugar-coated dough balls on the prepared baking sheets, leaving enough space between each cookie
Bake in the preheated oven for 8-10 minutes or until the edges are set but the centers are still slightly soft
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once cooled, store the cookies in an airtight container
