West Texas Enchiladas at Miz Helens Country Cottage
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 10 oz red enchilada sauce
- 1 can 4 oz chopped green chilies
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- Chopped fresh cilantro, for garnish
Instructions:
Set the oven to 350F 175C and heat it up
Fry the ground beef, onion, and garlic in a pan over medium-low heat until the beef is browned and the onion is soft
Get rid of extra fat
Add the green chilies, cumin, chili powder, salt, and pepper, and mix them in
Let it cook for 5 minutes
Put a little oil in another pan and heat it over medium-high heat
To make them soft, quickly fry each tortilla for 10 seconds on each side
Put a small amount of the beef mixture in the middle of each tortilla, then roll them up
Put it in a 9x13-inch baking dish that has been greased seam-side down
Add more shredded cheddar cheese on top of the enchiladas and any beef mixture that is left over
Put it in an oven that is already hot and bake for 20 minutes, or until the cheese melts and bubbles
Add chopped cilantro as a garnish before serving
