Skirt Steak with Shallot Pan Sauce
Skirt steak that is cooked just right and served with a tasty shallot pan sauce makes a tasty and filling meal.
Ingredients:
- 2 skirt steaks
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 shallots, finely chopped
- 1/2 cup beef broth
- 2 tablespoons balsamic vinegar
- 1 tablespoon butter
Instructions:
On both sides, salt and pepper skirt steaks
In a pan, heat the olive oil over medium-high heat
Put the skirt steaks in the pan and cook them for three to four minutes on each side for medium-rare, or longer if you like them more done
Take the steaks out of the pan and set them down to rest
Put chopped shallots in the same pan and cook them until they get soft
Add the balsamic vinegar and beef broth, making sure to scrape up any browned bits on the bottom of the pan
For about 5 minutes, let the sauce cook down until its a little less thick
Add butter and stir until it melts and the sauce gets thicker
Take the skirt steaks and cut them against the grain
Then, pour the shallot pan sauce over them and serve
