Cajun Gumbo with Shrimp and Sausage
A quick and flavorful Cajun gumbo loaded with shrimp and sausage, perfect for a comforting weeknight dinner. The roux adds richness to the dish while Cajun seasoning brings a spicy kick. Serve over rice for a complete meal.
Ingredients:
- 1 lb shrimp, peeled and deveined
- 1/2 lb smoked sausage, sliced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can 14
- 5 oz diced tomatoes
- 4 cups chicken broth
- 1/4 cup all-purpose flour
- 1/4 cup vegetable oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Cooked rice, for serving
- Green onions, chopped, for garnish
Instructions:
Put vegetable oil in a large pot and heat it over medium-low heat
To make a roux, add the flour and whisk it in all the time
Cook for about 10 minutes, or until it turns a dark brown color
Put in the garlic, onion, bell pepper, and celery
It will take about 5 minutes of cooking until the vegetables are soft
Add the chicken broth, thyme, oregano, bay leaf, salt, and pepper, along with the diced tomatoes
Bring to a boil, then lower the heat and let it cook for 15 minutes
Put in the sausage and shrimp
Cook for about 5 minutes, or until the shrimp are pink and fully cooked
If you need to, change the seasoning
Add chopped green onions on top of the hot dish served over cooked rice
